The Ultimate American Pie
This is the ultimate American Apple Pie because no one will ever forget this pie after eating it. It’s been made in my family for decades. This quick and easy recipe will have you making perfect apple pies in no time.

For the crust:
2 cups (leveled) all-purpose flour
1 cup refrigerated unsalted butter
½ cup refrigerated cream cheese
1 tsp. cider vinegar
¼ tsp. baking powder
¼ tsp. salt
2 tbsp. cold water
For the filling:
1 tbsp. lemon juice
2 tbsp. unsalted butter
¼ cup brown sugar
¼ cup granulated sugar
2 tsp. cornstarch
1 tsp. ground cinnamon
¼ tsp. nutmeg
¼ tsp. salt
For the crust:
Freeze the butter pieces for 30 minutes until solid. Mix flour, salt, and baking powder together in a freezer bag and freeze for 30 minutes.
Take the flour mixture out of the fridge and add the cream cheese pieces in it. Add the frozen butter pieces, water and vinegar and pour this mixture in a food processor. Process for about 20 seconds. Divide the mixture in two portions and pour into two plastic bags.
Knead the mixture from outside the bag by pressing it with your fingers until a solid dough is formed. Repeat with the second bag. Form discs and refrigerate the dough for an hour.
, preferably overnight. (For a pie shell and lattice, divide it in a ratio of two thirds: one third — use about 9.5 ounces for the shell and the rest for the lattice, flattening the smaller part into a rectangle.)
For the pie:
Use one dough disc from the refrigerator to make the bottom crust. Lightly flour two sheets of plastic wrap and roll the bottom crust 1/8 inch thick and 12 inches in diameter. Lay it over a 12 inches in diameter pie pan. Gently trim off the edges from the sides of the pie pan. Wrap it with a plastic wrap and refrigerate for an hour.
Now mix together the apples, brown sugar, granulated sugar, lemon juice, cinnamon, nutmeg and salt in a large bowl. Cook this mixture over medium-high heat with the butter till the apples soften and the syrup caramelize. Now dish out the apples in a large bowl and sprinkle cornstarch over them. Gently toss the apples until the cornstarch dissolves.
Pour this apple mixture over the bottom crust in the pie pan. Level the mixture well. Now roll the other dough disc into 1/8 inch thick square shape dough. Cut ¼ inch strips and lay half of them horizontally over the apple mixture. Weave the remaining strips vertically to form a lattice. Gently trim the extra parts from the sides of the pie pan. Now brush the strips with egg wash. Preheat the oven to 350 degrees F (175 C) and bake the pie for 15-20 minutes. Use a fork to check whether the crust is baked. Take the pie out when it turns slightly golden. Allow it to cool on the baking tray for about 5 minutes. Serve warm.
